This carrot soup is colourful, refreshing and full of nutrients; a soup perfect for winter months! Though I have tried several soup recipes; this is the first soup post in my blog!

Cauliflower - 3 to 4(small individual florets)
Garlic - 2 to 3 cloves (chopped)
Onion - 1 medium (finely chopped)

Recipe for Carrot Soup
Recipe type: Soup
Serves - 3 to 4(approximately)
Ingredients:
Cauliflower - 3 to 4(small individual florets)
Garlic - 2 to 3 cloves (chopped)
Onion - 1 medium (finely chopped)
Water / Veg stock / Chicken stock - 2 cups
Salt - to taste
Pepper powder - as required
Butter / Olive oil - 1 tbsp
Cream - 1 tbsp
If you felt the soup is thick either you can add milk or water to dilute.
Directions:
Heat olive oil / butter in a pan, add onion and garlic, sauté till onion gets translucent.
Next add chopped carrots, cauliflower florets, salt and water / any stock you prefer(veg / non veg).
Close the pan with the lid and allow to cook till the veggies are cooked.
Allow the mixture to cool and separate the liquid and veggies separately.
Keep the liquid for later use. Grind the veggies by using mixer into fine paste.
Now add both drained liquid and veg mixture into the same pan. Just heat the mixture again.
Season it with salt and pepper according to your taste. Add cream / milk at last to enrich the taste.
You can also add potato instead of cauliflower to give thickness to the soup.

Switch off the flame. Garnish with the dash of cream / coriander leaves and serve hot!
