All purpose flour - 2 cups
Dates - 25 to 30 no. (De - seeded)
Milk - 2 cups
Granulated Sugar - 1 ½ cup
Oil - ¾ cup
Baking Soda - 2 tsp
Nuts - 2 tbsp chopped (I used pistachio)
Directions:
Preheat oven to 180 deg C; also prepare your cake tin (grease with butter / oil and dust it with all purpose flour) and keep aside.
Sift together all purpose flour and baking soda; keep aside.
Soak the dates in 1 cup warm milk for 30 minutes or till it becomes soft. Grind it into smooth paste and keep aside.
Preheat oven to 180 deg C; also prepare your cake tin (grease with butter / oil and dust it with all purpose flour) and keep aside.
Sift together all purpose flour and baking soda; keep aside.
Soak the dates in 1 cup warm milk for 30 minutes or till it becomes soft. Grind it into smooth paste and keep aside.
Take a wide bowl; add oil and sugar beat well till it is frothy. Add the grounded dates mixture and remaining milk; beat well.
Next add sifted dry ingredients(all purpose flour & baking soda) to the dates mixture and beat on medium speed until mixed thoroughly. Stir in the nuts (reserve some for topping).
Pour the batter into the greased cake tin and bake on preheated oven at 180 deg C for 30 – 35 minutes, until a toothpick inserted into center of a cake comes out clean.
Remove from oven and allow to cool completely.
Note:
You can also add vanilla essence to give extra flavour.
The colour of the cake depends upon quality and colour of the dates you are using!
