Cabbage poriyal / stir fry is a very common South Indian accompaniment; here I have added moong sprouts in it for its nutritional benefits and to promote its use in our daily food.
Cabbage - 3 cups ( shredded or finely chopped)
Moong / Green gram sprouts - ½ cup
Onion - 1 ( finely chopped)
Green Chilli - 2
Turmeric powder- ¼ tsp
Red chilli powder - ¼ tsp
Grated coconut - ¼ cup

The quality of protein in beans improves when it is sprouted.
Sprouts are considered to be healthy, as they have good quality protein, anti-oxidants and other vitamins & minerals.
Eating sprouts will improve digestion and can flush out the impurities; it also aids in detoxifying the blood.
Eating sprouts regularly can help in maintaining a healthy skin.
Sprouts can easily be grown at home and is cheaper too.
You can include sprouts in salads, poriyal / stir fry, gravies, etc.

Oil - 1 tbsp
Mustard seeds - ½ tsp
Urad Dhal - ½ tsp
Curry leaves - 1 sprig
Salt - to taste
Pressure cook moong sprouts for one whistle and keep aside. You can also steam the sprouts till it become soft (not mushy) and use in cooking.
After it crackles, add chopped onion and green chilli. Fry till onion becomes translucent.
Now add chopped cabbage, salt, turmeric powder, red chilli powder and water (just sprinkle). Give it a mix.
Close the pan with a lid and cook in medium flame till the cabbage becomes soft and water dries up.
Sprinkle grated coconut and give it a thorough mix; switch off the gas.
Your nutritious cabbage moon sprouts poriyal is ready to eat.
Note:
You can also use beetroot / carrot instead of cabbage.
Adjust the spice level to suit your taste buds.

Directions:
Heat oil in a kadai; add all the ingredients under "For seasoning" one by one.
After it crackles, add chopped onion and green chilli. Fry till onion becomes translucent.
Now add chopped cabbage, salt, turmeric powder, red chilli powder and water (just sprinkle). Give it a mix.
Close the pan with a lid and cook in medium flame till the cabbage becomes soft and water dries up.
Sprinkle grated coconut and give it a thorough mix; switch off the gas.
