This is a mildly spiced stir fry recipe using fiber rich vegetable ( Chow Chow / Chayote ) and mostly served as a accompaniment to rice. Try it!
Ingredients:
Chow Chow - 2
Onion - 1(finely chopped)
Green chillies - 3 to 4 (slited lengthwise)
Cooked Toor dhal / Thuvaram paruppu - 1 to 2 tbsp (optional)
Turmeric powder - ½ tsp Salt - to taste
Grated coconut - 1 to 2 tbsp

For Seasoning:
Oil - 2 to 3 tsp
Mustard seeds - 1 tsp
Urad dhal - ½ tsp
Channa dhal - ¾ tsp
Curry leaves - 1 sprig
Mustard seeds - 1 tsp
Urad dhal - ½ tsp
Channa dhal - ¾ tsp
Curry leaves - 1 sprig
Directions:
Wash, peel the skin; remove the inner soft seed and chop the chow chow into bite sized pieces. Keep aside.
Heat oil in a kadai; add mustard seeds, urad dhal , channa dhal and curry leaves.
After the mustard seeds crackles, add chopped onion and green chilli. Fry till onion becomes translucent.
Now add chopped chow chow, turmeric powder, salt and water. Give it a mix.
Close the pan with a lid and cook till the chow chow t becomes soft and water dries up.
Add cooked dhal and grated coconut; give it a thorough mix. Switch off the gas.
Your healthy and tasty poriyal is ready to serve!
Note:
Instead of green chillies you can use red chiilies or chiili powder for spice.
Adding cooked dhal is optional.
To reduce the cooking time; you can even pressure cook this vegetable for one whistle and continue the process.
