Black Rice Payasam / Kavuni Arisi Payasam

Try this delicious creamy payasam / kheer using Black Rice (Kavuni Arisi).

Ingredients:


Kavuni Arisi / Black rice - ½ cup
Full cream milk - 6 cups
Water- 2 cups
Sugar - ¾ - 1 cup (Adjust according to your taste)
Milkmaid - ½ cup
Cardamom powder - ½ tsp
Cashew nuts (Optional) - 10 (Broken into pieces)




Directions:

Wash and soak the rice in 4 cups of water for about 3 to 4 hours. 


Pressure cook rice with water; after the first whistle, simmer for 15 to 20 minutes and switch off the gas.


Heat milk in open pan and allow to boil.  Add the cooked rice and mix well. 


Allow to cook in medium flame, till milk reduces to half the quantity and looks creamy.


Add condensed milk and sugar. Give it a mix.


Reduce the flame and cook for some more time till the sugar melts.


Mean while; heat ghee in a small  pan,  add cashews and fry till the colour changes into golden brown colour.

Add cardamom powder and roasted cashews to the kheer.  Switch off the gas.
  
Serve warm or chilled.
 
Note:

You can also do this kheer / payasam without adding condensed milk.
