Basundi / How to make Basundi at Home

   Wishing You All A Happy Colorful Holi!

Wow...Poornima's Cook Book has reached 3,00,000 page hits today!!!!   Here I am sharing one my favorite and also a popular cum easy to prepare Dessert / Sweet  to celebrate this special occasion.

Basundi is an Indian dessert popular in Maharashtra, Gujarat and Karnataka. It is a delicious sweet made by boiling milk on low heat until the milk is reduced by half, very similar to rabdi.


Serves - 3 to 4 persons

Ingredients:

Milk - 1 litre
Sugar - 1/4 to 1/2  cup
Nuts - 8 to 10 pieces each (finely chopped)
(almonds, pista, etc)
Cardamom powder - 1/4 tsp tsp
Saffron  - few strands



Directions:



Take a thick bottomed wide vessel; add all the milk and  allow to boil.

Take the ¼ cup warm milk and add saffron.   Let it soak  for 5-10 minutes and keep aside. 




Once it is boiled reduce the flame to low and continue the process.

(Remember to keep scraping the sides of the vessel when cooking, as it  will make the basundi thick and creamy )

Repeat the above till the milk reduces to half  in volume 
and looks creamy; while stirring occasionally ( it takes nearly 20 to 30 minutes)

Now add  sugar and cardamom powder.




 
Allow to cook for another 5 to 10 minutes or till the sugar melts.

Mix it well;  add nuts and 
 saffron infused milk.



Switch of the gas and allow to cool. 





Serve chilled.  



Note: 

Once it cooled it tends to thicken more and taste delicious.

Adjust the sugar quantity according to your taste.


You can increase the amount of saffron to suit your taste.
