This cabbage egg poriyal / stir fry is an dry preparation flavored with spices makes a delightful accompaniment to any South Indian main course.
You can also use this as a stuffing for chapathi rolls and sandwich too.

Break eggs in a bowl and beat it thoroughly; keep aside.
Heat oil in a wide kadai; season it with cumin seeds and fennel seeds.
After it crackles add the onions and saute until the colour changes to golden brown.

Cabbage - 3 cups(shredded)
Onions - 1 medium, finely chopped
Turmeric powder – ¼ tsp
Red Chili Powder - ½ tsp adjust according to your taste)
Pepper powder - ½ tsp
Garam masala powder - ¼ tsp (optional)
Salt – to taste
Cilantro – 1 tbsp(finely chopped)
For Seasoning:
Oil – 1 Tbsp
Fennel seeds - ¼ tsp
Cumin seeds - ½ tsp

Add cabbage, spice powders and salt; mix well.
Close the pan with a lid; cook till the cabbage becomes soft and water dries up.
(no need to add water as cabbage leaves enough water to cook). If you find it dry add very little water.
Add the eggs along with chopped coriander leaves into the center of the pan, slowly mix in the cabbage mixture till it blended well.
Yes sometimes adding egg to simple veggie makes it intresting .Love it

nice. i do the same as u said, for filling in chapathi rolls for kids. the cabbage gets in to their tummy by default... nice healthy dish dear.

ReplyDeleteI use to do the same recipe but not the poriyal way. i use to do for sandwich stuffing. This goes well with rice. I like to eat your recipe with rice and rasam combination. Mouth watering...
