Chicken Tikka is one of the popular dishes of India, in which chicken cubes are marinated in a combination of yogurt and fresh spices, then grilled on skewers. Try out the exotic flavor of these chicken cubes!
Ingredients:
Boneless chicken breasts - 2 (450 grams)
Capsicum - 1 small (cut into cubes)
Onion - 1 medium (cut into cubes)
For marinating:
Capsicum - 1 small (cut into cubes)

Ginger-garlic paste - 1½ tbsp
Turmeric powder - ½ tsp
Turmeric powder - ½ tsp
Red chilli Powder - 1½ tsp
Corriander powder - ¾ tsp
Cumin powder - ½ tsp
Garam masala powder - ½ tsp
Yogurt - 2 tbsp
Salt - to taste
Red food colour - a pinch (optional)
Lemon juice - 2 to 3 tbsp
Kasuri methi - a big pinch
Oil - 1 tbsp
Oil - 1 tbsp
For basting / brushing:
Extra virgin olive oil or Butter
Directions:
Clean the chicken and cut into cubes. Rub it with salt and 1 tbsp lemon juice; Keep aside for ½ an hour.
To marinate, mix yogurt / curd (without water), turmeric powder, red chili powder, coriander powder, cumin powder, ginger garlic paste, garam masala powder, salt, oil and remaining lemon juice.
Apply this mixture over the chicken pieces and allow to marinate for 4 to 5 hours, preferably overnight.
Put the chicken into the wooden skewers, placing onion and capsicum cubes in between.
Turn on your oven to grill mode. Place the skewers on the grill racks in your oven with a tray underneath to catch drippings.
Cook for 15 to 20 mins, till it is become soft. Turn and brush with oil or butter about halfway through grilling.
Serve with onion rings and lemon wedges.
Note:
Adjust spice level to suit your taste.
