This is a simple and easy to prepare South Indian rice variety . Though it looks like lemon rice ; the tangy taste from mango and the addition of roasted peanuts give a unique taste to this rice. so try this and enjoy.
Mango - 1 medium sized
Rice - 1½ cup (cooked)
Peanuts - 2 tbsp(Roasted)
Turmeric powder- ¼ tsp
Salt - to taste
For Seasoning:
Oil - 1 to 2 tbsp
Mustard Seeds - 1 tsp
Fenugreek - ¼ tsp
channa dhal - ½ tsp
Red chillies - 4
Green chillies - 2
Curry leaves - few
Asafoetida - a pinch
Directions:
Peel the skin of the mango and and grate; Keep aside.
Heat oil in a kadai and season with all the ingredients given under "For Seasoning" one by one.
Once it splutters add grated mango along with turmeric powder and salt . Saute for 2 -3 minutes and now add rice and roasted peanuts..
Mix well till it is well combined with mango mixture.
Note:
You can also prepare this recipe with leftover rice also.
You can increase the amount of mango according to your taste.
