Pal payasam is a traditional dessert suitable for all occasions and festivals.
In kerala this is prepared using broken matta rice (red rice), milk, sugar and flavored with cardamom powder. This payasam don't need any cashews and raisins, as the taste of milk and rice itself is divine.

Serves - 5 to 6 persons
Cooking time - 40 minutes
Ingredients:
Full cream milk - 6 cups
Water- 1 ½ cup
Broken matta rice - ½ cup
Sugar - ¾ - 1 cup (Adjust according to your taste)
Cardamom powder - ½ tsp
Cashew nuts (Optional) - 10 (Broken into pieces)
Water- 1 ½ cup

Directions:
Wash the broken matta rice and keep aside.
Heat water in an open pan; add rice and allow to cook.
When it is ¾ done; add the milk and allow to cook in medium flame, till milk reduces to half the quantity and looks creamy.
Now add sugar and cardamom powder.
Reduce the flame and cook for some more time till the sugar melts. Remove from flame .
Garnish with cashews (optional) before serving.
Serve hot or cold as per your choice.
Note:
When the payasam is cooled, it tends to get thick. So before serving add some milk till it reaches the desired consistency.
Adding nuts and raisins are purely optional.
