Carrot Kheer / Carrot Payasam / Carrot Almond Kheer

Carrot Kheer is a tasty, healthy and nutritious dessert.   I prefer this as a dessert for get-togethers / parties at home.   I usually prefer this as a dessert for get-togethers / parties at home particularly for the health benefits of carrot and almonds!

Ingredients:

Carrot - 3 to 4 medium
Milk -3 cups
Almonds / Badam - 10 nos.
Sugar - 1/2  cup (adjust according to your taste bud)
Cardamom - 1 tsp
Cashew nuts - 15 to 20
Raisins – 5 to 10 pieces
Ghee - 1 to 2 tbsp 




Directions:

Heat ghee in a pan, fry the raisins till it plump up.

Followed by that add broken cashews and fry till the colour changes into golden brown colour.

Blanch and peel the skin of almonds. keep aside.

Wash the carrots and cut into pieces; pressure cook by adding one cup  of milk for 2 to 3 whistles.

Cool down the carrots to room temperature and grind it with the blanched almonds.


Take a deep vessel, pour the milk and boil.





Allow to boil for 10 minutes in a medium flame.   After that add in the ground carrot almond paste, cardamom powder, roasted cashews& raisins and sugar.




Reduce the flame and cook for some more time till the sugar melts. Remove from flame .

Serve hot or cold as per your choice.



Note:

If you are using condensed milk; reduce the amount of sugar and continue the process.
