Banana Crumb Muffins


These banana crumb muffins are light and fluffy; especially the crunchy topping over the muffins makes it very special!


Ingredients: (Yield: 10 large muffins)

All-purpose flour: 1 cup
Whole wheat flour: ½ cup 
Baking soda: 1 tsp 
Baking powder: 1 tsp
Salt: ½ teaspoon
Medium sized Bananas, mashed: 4 nos.
White Sugar: ½ cup 
Egg, lightly beaten: 1 no.
Vanilla essence: 1 tsp 
Honey: 1 tbsp
Butter, melted: 1/3 cup

For the crumb topping:
Packed brown sugar: 1/3 cup 
All-purpose flour: 2 tbsps
Ground cinnamon: 1/8 tsp or cocoa powder: 1 tbsp 
Butter: 1 tbsp 

Directions:

Preheat oven to 200 deg. C. Lightly grease 10 muffin cups, or line with muffin papers. 

In a large bowl, mix together both the flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups. 


In a small bowl, mix together brown sugar ,2 tablespoons flour and cinnamon in 1 tablespoon butter until mixture resembles coarse cornmeal.sprinkle topping over muffins.


Bake at 200 deg. C for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
