Fig and Honey Pudding - Eggless(No bake pudding)

This is a delicious, creamy eggless pudding using china grass as a thickening agent.  I am sure every one in your family will love this fig and honey combination in the dessert.   

I learnt this recipe from my neighbour Ganga chechi.   Thank you chechi for the simple and also for tasty pudding recipe.  Try this recipe and give your feedback.

A small on Agar - agar / China grass:

Agar agar (china grass) is a vegetarian substitute for gelatin which is flavorless and odorless, which makes it an excellent thickening agent for cooking especially for desserts like puddings.

Agar Agar is a rich source of calcium and iron, and also very high in fiber.  It contains no sugar and fat free.  It is known for its ability to aid in digestion and weight loss.




Ingredients:

Dried Fig - 100 g
Milk - ½ litre 
China grass - 10gms
Milkmaid / condensed milk - ¾ th to 1 tin full (1 tin = 395 g)
Fresh cream - 150 g
Honey - 2 tbsp
Directions:

Cut china grass into small pieces and soak in water for nearly 15 to 20 minutes.

Boil the dried figs using little water till it becomes soft.


Once it done, allow to cool and grind it into fine paste.
Boil milk in a pan.  Meanwhile squeeze the excess water from the soaked china grass and add it to the milk.  Stir well till it is dissolved. 

After it is done; switch off the gas.

Filter the milk, to remove the strands.  While the milk is warm, add condensed milk, fresh cream, fig paste and honey.   Mix it using a whisker or spoon.
Once it blended well, immediately transfer the mixture to a bowl.
Garnish with chopped / sliced almonds and and refrigerate for at least 4 to 5 hours.   

Once it is set, slice and serve.   

Serving Suggestion:
Drizzle with  honey while serving!

Note:

China grass has a tendency to set fast even in room temperature, so pour it immediately into moulds / bowls and allow to set.

You can also scoop it out / slice it while serving.

Instead of figs, you can try this pudding using dates.

You can also try this recipe using gelatin instead of china grass, if so add 2 tsp full.


Adjust the sweetness according to your taste.
