Erissery is traditional veg accompaniment from kerala cuisine; prepared by adding vegetables in coconut paste and seasoned with roasted coconut. You can prepare this dish by using plantain in combination with yam, pumpkin etc.

Ingredients:
Yam – 2 cups cubed
Turmeric powder - ½ tsp
Salt - to taste
To grind:
Pepper - ½ tsp ( adjust according to your spice level)
Cumin seeds -¾ tsp
Grated Coconut - ½cup

For seasoning:
Coconut oil – 1 to 2 tbsp
Mustard seeds – ½ tsp
Urad dhal - 1 tsp
Dry red chillies – 2
Curry leaves – 1 sprig
Grated coconut – ¼ cup
Take a wide pan, add yam along with water and turmeric powder; cook till it is becomes soft.
Add the coconut paste, mix well and allow to cook for 2 to 3 minutes. Switch of the gas.
In a separate pan, season with all the ingredients given under "For Seasoning" one by one. Fry till the grated coconut turns golden brown colour.
Pour it over the chena / yam mixture; mix thoroughly.
Serve hot as a accompaniment for rice.
Note:
Adjust the water level according to the consistency you prefer.
You can also add plantain along with yam.
